stuffed calzones from homemade dough with matty!

here is my recipe for homemade calzones! I use a basic pizza dough recipe that i’ve been using for years.



This would make about 10 calzones, give or take.


4 1/2 cups unbleached all purpose flour
1 3/4 tsp salt
1 tsp instant yeast
2 tbs extra virgin olive oil
1 3/4 C cold H2O


1. stir flour, salt, yeast in bowl or mixer to combine


2. slowly add oil and cold water while mixing until the dough comes together. it’s just right when it’s springy, smooth and doesn’t stick to your dry hands, but isn’t too dry and floury. it will take a few minutes of kneading to get here.


3. flour your cutting board and cut the dough into 4 equal pieces and roll them into balls. place them on a plate with room to expand and cover with plastic wrap, then refrigerate for an hour or up to a full day before using. the dough can also be frozen


4. To make the calzones, cut each of these balls into 3 pieces when they are ready and make smaller balls. then roll them out and fill them with some mushrooms, onions, peppers, ricotta and mozzarella cheese. you can fill them with basically anything you want. Seal them and cut little holes on top to allow steam to escape, and bake them at 450 degrees on a preheated pizza stone. they come out amazing!
